This sweet and spicy pineapple salsa pairs well with Live Ocean's Teriyaki Salmon with Pineapple Salsa Flavored Butter or Live Ocean's Sweet Thai Chili Salmon fillets.

Ingredients
Salmon with Pineapple Salsa Flavored Butter (sub Sweet Thai Chili Salmon)
  • 2 fillets Frozen salmon fillets cooked according to package directions
Pineapple Salsa
  • 3 Cups Diced fresh pineapple, about 1 medium - not canned or frozen
  • 1 Red pepper, chopped
  • 1/2 Cup Chopped red onion - about 1/2 an onion
  • 1/4 Cup Fresh cilantro, roughly chopped
  • 1 Jalapeno, finely diced and seeds removed- add more or less depending upon heat preference
  • 3 Tblsp Fresh lime juice - about 1 - 1 1/2 limes, to taste
Salsa Options
  • 1/2 Cucumber, peeled, seeded, and diced
  • 8 Cherry tomatoes, halved
  • 1 Avocado, diced
Instructions
Pineapple Salsa
  1. 1. In a medium serving bowl, combine the pineapple, bell pepper, onion, cilantro, and jalapeƱo. Add the lime juice and salt, and stir to combine.

    2. Season to taste with additional lime juice (for zing) and/or salt

    3. Set aside while cooking salmon to let the flavors meld.

    Best if served fresh but keeps well, chilled, for up to 4 days.

Frozen Salmon
  1. Cook according to package directions.

  2. Divide salsa on to plates, top with Live Ocean Salmon with Pineapple Salsa Flavored Butter or Live Ocean Teriyaki Salmon.

Recipe Notes
  1. If you don't want to bother with cutting up a fresh pineapple, you can buy pre-cut fresh pineapple and dice it smaller for more flavor.
  2. Substitute mango, papaya, or add more tomatoes.
  3. Lightly grill your pineapple for a smokier flavor.
