Sweet and Spicy Salmon Soba Salad

This sweet and spicy soba noodle salad pairs perfectly with either our Thai Sweet Chili Salmon or our Teriyaki Salmon with Pineapple Salsa Flavored Butter.

Ingredients

Live Ocean Salmon

  • 2 Fillets Live Ocean Sweet Thai Chili Butter Salmon or Teriyaki Pineapple Salsa Flavored Butter Salmon. Cook according to package directions after making Soba Noodles.

Sweet and Spicy Soba Noodles

  • 8 oz Soba noodles, cooked according to package directions
  • 2 Avocados, pitted, peeled, and sliced
  • 1 Watermelon radish, thinly sliced
  • 1/2 Cup Cilantro, chopped
  • 1 Tblsp Toasted sesame seeds
  • 1/4 Cup Thinly sliced green onions - Optional Garnish

Soba Noodle Sauce

  • 1/4 Cup Soy sauce *Substitute Tamari or Coconut Aminos for Gluten Free options
  • 1 Tblsp Fresh squeezed lime juice, juice of about 1 lime
  • 2 Tblsp Mirin *If you don't have mirin, you can make your own by adding a little sugar to rice wine vinegar and whisking until incorporated.

Instructions

Sauce

  1. Whisk together all the sauce ingredients in a small bowl and set aside.

Soba Noodle Salad

  1. Drain the cooked noodles and add to a large bowl.

  2. Add the rest of the Soba ingredients, except sesame seeds.

  3. Toss with sauce.

  4. Divide on to 2 plates and top with sesame seeds.

Live Ocean Salmon

  1. Cook salmon according to package instructions. Be careful to not overcook the salmon.

  2. Add to plate with Soba noodles.
