Ingredients

Teriyaki Salmon with Pineapple Salsa Flavored Butter

  • 2 Fillets Teriyaki salmon cooked according to package directions

Spring Roll Salad

  • 1 Cup Pineapple chunks, canned drained
  • 1 Cup Shredded red cabbage
  • 1 Cup Shredded green cabbage
  • 1 Cup Shredded carrots
  • 1/2 Cup Roasted peanuts coarsely chopped
  • 1/4 Cup Cilantro coarsely chopped
  • 1/4 Cup Rice noodles or substitute cooked Jasmine rice
  • 2-3 Green onions chopped
  • Sweet chili sauce for serving

Instructions

Spring Roll Salad

  1. In 2 bowls, put a layer of rice noodles or rice on the bottom of the bowls.

  2. In 2 bowls, layer the red cabbage, green cabbage, carrots, and pineapple chunks.

  3. Sprinkle with chopped peanuts, fresh cilantro, and green onions.

Teriyaki Salmon

  1. Once salad is assembled, cook salmon according to package directions.

  2. Share the sweet chili sauce between the 2 salads and enjoy!
